Dalian Shuangpi Nai is mainly brewed with milk, egg white and sugar. It is warm and colorful and can be eaten hot or cold. Loved by both men and women, suitable for all ages. It nourishes lungs and nourishes skin, it's wonderful. Its peculiarity is also that it contains a two-layer milk foam, one layer is sweet and fragrant, and second layer is with a light aroma, which is why it is called "double foam milk".
Material methodPour milk into a milk pot and bring it to a boil over medium heat, but do not boil it, otherwise milk froth will break if it forms too early.
Pour it into a bowl while it is hot. After cooling, a layer of wrinkled milk foam forms on surface of fresh milk. This is first layer of two-layer milk.
After milk has cooled, pierce milk froth with chopsticks, slowly pour milk into a bowl, leaving a little milk so that milk froth does not stick to bottom, beat egg white with chopsticks and add sugar. Stir milk evenly.
Slowly pour milky-egg liquid, which has been evenly stirred around edge of bowl, back into bowl of crema, and you will see crema slowly float to top.
Cover neck of bowl with plastic wrap, place it in a saucepan and cook over medium heat for 10 minutes until it condenses, then turn off heat.
You can also sprinkle with boiled red beans, it looks appetizing.
