Clean and wash sweet potatoes, cut into slices.
Peel sweet potato and put it in salt water (to avoid discoloration).
Soak red dates in water until they are soft.
Cut sweet potato into slices, peel and cut ginger for later use.
Place processed sweet potato, Chinese yam, red dates and ginger slices in a saucepan.
Pour in water and bring to a boil.
After boiling over high heat, switch to low heat and simmer until all ingredients are soft enough, add some yellow chopped sugar.
Wait until candied yellow pieces are cooked and dissolved in water.
Sweet and thick, eat while it's hot!
