Lychee jelly bicolor
  • March 09,2023

For first time I'm making lychee flavored jelly. It tastes quite sweet and has a lychee flavor. It doesn't really add any flavor, and it's authentic! ! To enrich color, another tea jelly was made with rosella tea soup and combined into a red and white layered effect. Honey is added to tea jelly to neutralize sour taste of rosella, and taste is just right, red layer is sweet and sour and white layer is sweet. I did not filter lychee juice, so I can still eat a little crushed pulp. Although visual transparency was sacrificed, taste buds were pleasantly surprised. In summer, why not make one-of-a-kind ice at home to give your family a special and cool feeling?

Ingredients: 10 litchi, 2 roselles, 18 g of isinglass powder, 2 tsp. honey.
  • 1 Lychee jelly bicolor

After washing lychee, remove shell and core and use a blender to make juice. (the lychee pulp itself has a high water content, so you do not need to add water when whipping)

  • 2 Lychee jelly bicolor

Mix 18 g of fish gelatin powder with 120 ml of cold boiled water, then heat in water until fish gelatin powder is completely dissolved and let stand until completely cooled

  • 3 Lychee jelly bicolor

Mix lychee juice in step 1 and half of gelatin powder solution in step 2, add 1 teaspoon of honey, stir and mix evenly

  • 4 Lychee jelly bicolor

Prepare two clean glasses, scoop 1 tablespoon of lychee solution in step 3, pour it into glasses and refrigerate until set. (Usually 15-20 minutes to harden)

  • 5 Lychee jelly bicolor

Break rosella in 250 ml of boiling water and drain tea broth. Evenly mix tea soup and remaining isinglass powder solution, let cool, add 1 tablespoon of honey and mix well, set aside

  • 6 Lychee jelly bicolor

After lychee layer has solidified, add 1 tablespoon of rosella solution to cup, then refrigerate it until set

  • 7 Lychee jelly bicolor

Thus, after one layer has hardened, another layer of mortar is added to create a layered effect. —— It is very easy to work with, it needs a little patience and time, you can DIY it when you are at home on weekend
