Jade Plate Crab

Main ingredients: 50 g crab meat, 5 eggs, 50 g fish meat, 250 g vegetables.

Auxiliary materials: Shuifa mushrooms, boiled ham slices, 5g each shallot leaves, 2 teaspoons Shaoxing wine, appropriate amount of ginger juice and raw powder, 100ml broth, 50g boiled lard


1. Boil eggs in a saucepan with cold water, remove, soak in cold water and peel, cut each egg into 4 parts, remove yolk and put on a plate. Gather and wash green vegetables, filter water, grind fish meat into mud and put it in a bowl, add ginger juice, salt, 1 teaspoon of Shaoxing wine and an appropriate amount of water, and mix well to make a filling. Put crab meat in a bowl, add salt and 1 teaspoon of Shaoxing wine to adjust taste;

2. Put dry starch on a protein plate, put 1 serving of fish meat on each plate, then put 1 serving of crab meat on a plate and arrange them in a plate. Put a little crab caviar in middle of plate for one serving, and put green onion leaves, slices of shiitake mushrooms and slices of ham on rest, steam on a plate and remove;

3. We put pan on medium heat, add boiled bacon (35 grams) and cook until half cooked, add greens and fry, add salt and fry until tender, put in a plate to filter juice, transfer steamed crabs to a dish. Put soup in a frying pan, salt a little, thicken with starch water, pour in boiled lard and pour on top.

Food compatibility

Crabs should not be eaten with sweet potatoes, pumpkin, honey, oranges, pears, pomegranates, tomatoes, melons, peanuts, snails, celery, persimmons, rabbit meat and non-peta; crabs should not be eaten with cold drinks, which will cause diarrhea.
