Fried Canned Melon with Swallow Juice is a famous traditional dish in Guangdong. Made by boiling winter melon and bird's nest separately, this dish is jade-white in color, fresh in taste, and soft in texture. Yuan Mu, a poet of Qing Dynasty, praised in Suiyuan Food List: “When I went to east of Guangdong, winter melon bird's nest in Yang Mingfu was very good. Use soft to match soft, use clear to peel, reuse chicken juice and mushroom juice, and bird's nest is very good. It's color of jade, it's not pure white."
