First of all, prepare ingredients, take a bowl, pour in 2 grams of salt, 100 grams of vegetable oil, then add appropriate amount of water, cold water can be used in hot weather, but now it's cold, use warm water 40 degrees, stir the salt with chopsticks and add 500 grams of flour.
Add salt to dough that is elastic and not easy to break.
First knead dough with chopsticks, flour will not be too sticky after kneading, then knead dough into a dough, and finally knead dough until it is soft, smooth and strong.
With a small brush, apply a layer of vegetable oil on surface of dough, then cover with a layer of cling film and leave for 30 minutes.
After 30 minutes, place dough on a cutting board and roll it out. First, roll out the dough with a rolling pin, do not roll it too thin.
Then cut with a knife into strips about a centimeter long and evenly grease with a layer of vegetable oil, as shown in the picture. Be sure to grease with vegetable oil evenly, otherwise it is easy to stick together.
Then fold strips together, cover with plastic wrap and bake for another 10 minutes.
After 10 minutes, mash long strips several times on a cutting board, mash them into round strips, mash them as evenly as possible, mash them thinner, brush bottom of pan with vegetable oil and place round strips in disc and place them in middle of bowl.
Then brush coated thick strips with a layer of vegetable oil, knead these long strips into thick strips one by one according to method that was just done, after kneading, brush with vegetable oil, cover basin again with plastic wrap, send for 30 minutes.
After 30 minutes, first heat oil in a pan, and round noodles are ready. Next, we clamp one end of noodles in tiger's mouth with left hand, and with right hand we pull noodles into thin strips. Do not use force during this process. Too much force not to break noodles.
After pulling, we wind noodles around other finger for 9-10 circles as shown in picture, then take a couple of chopsticks, support them in wrapped circle of noodles, hold both ends with both hands and gently pull them up to about 20 cm in length.
Place it in a frying pan with 70% hot oil, slowly lower into frying pan with oil, then twist one end to side, shaping slightly, turn chopsticks over, and then remove chopsticks.
When it turns slightly yellow, turn it over to other side until it turns golden yellow and take it out.
You can eat after cooling.
