Among many Zibo delicacies, four main types of Zibo biscuits, namely Zhoucun biscuits, Zichuan biscuits, Linzi biscuits and Boshan biscuits, are very popular among people.
The recipe for Zichuan Meat Biscuit is simple, with a crispy crust and delicious filling.
In terms of production, after noodles are fermented, they are divided into small pieces on a cutting board, rolled into dough, pressed by hands by dipping into water to make pancakes, and then pressed on a plate with sesame seeds to cook pancakes on one side. Zhoucun sesame cakes are designed for hair growth, no fermentation and no stuffing, which is another feature.
Production: First, water and noodles are used to grow hair, and then divided into finger-sized portions, kneaded and processed on a cutting board to increase strength and stretch.
Then put balls in extension plate and with your hands dipped in water, spread them into a round and thin raw cake.
Place soaked, peeled and toasted sesame seeds in a wooden shaker plate, spread your arms and shake them back and forth to distribute sesame seeds evenly on plate.
Then lightly press down on raw cake with both hands, place it on a shaking plate to numb it, and then attach it to oven pan and it will bake in a few minutes.

Differences between four main types of biscuits in Zibo
Zhoucun biscuits, Zichuan biscuits, and Boshan biscuits are Han food. Sesame cake from Jinling City is a traditional minority food. Technology difference: Zhoucun sesame cake is for hair growth, while Zichuan, Linzi and Boshan sesame cake are fermented products. Zhoucun and Linzi biscuits have no filling, while Zichuan and Boshan biscuits have filling. In terms of production, baking is carried out in an oven, but Zhoucun sesame cake is baked in an oven, Jinling sesame cake is made of iron plates, Zichuan sesame cake and Boshan sesame cake are baked directly on oven wall. When making sesame cakes, Zichuan sesame cakes use molds while others do not. When filling is added, zichuan shaobing is wrapped with dough and then baked on one side with a mold, while boshan shaobing is baked directly on oven wall after filling. In terms of usage, Zhoucun biscuits are commonly used to make dim sum, while other three are used as a staple food.The diversity of cultivars has improved viability and space for development of Zibo Sesame Flatbread, and it has become a favorite among urban and rural residents alike.
